Pasta Ingredients- Chicken breast or thigh meat, 50g (cut into bite-sized pieces)
- Ginseng, 1/3 piece (prepared)
- Onion, 1/2 (thinly sliced)
- Garlic, 2 cloves (thinly sliced)
- Olive oil, 5 Tbsp
Samgyetang Broth Ingredients- Chicken, 100g (for broth, using bone-in chicken yields a richer broth)
- Ginseng, 2/3 piece (cleaned)
- Onion, 1/4 (cut into large chunks)
- Garlic, 3 cloves (whole)
- Black peppercorns, 6
- Green onion, 1/2 stalk (mostly the white part)
Sauce and Finishing Touches- Salt (to taste)
- Pepper, a pinch (for aroma)
- Butter, 1 Tbsp
- Granapadano cheese or Parmesan cheese powder, 1 tsp (for extra flavor)

Cooking Instructions
Step 1
First, prepare the Samgyetang broth. In a pot, add cold water, the chicken for broth, the cleaned ginseng, roughly chopped onion, whole garlic cloves, black peppercorns, and green onion. Bring to a boil over medium heat, then reduce to low and simmer until the liquid is reduced by half (this will take about 30 minutes to 1 hour). Strain the broth to get a clear liquid. Take the ginseng used in the broth, separate the soft inner flesh, mash it, and set aside. This mashed ginseng will add a wonderful depth of flavor to your pasta.
Step 2
Now, let’s prepare the ingredients for the pasta. Slice the onion thinly (about 0.5cm thick) and julienne the ginseng into approximately 5-6cm lengths. (If you find the ginseng flavor too strong, you can adjust the amount or soak it in cold water briefly to reduce its intensity.)

Heat 5 tablespoons of olive oil in a pan over medium-high heat. Add the prepared chicken pieces and sauté until they are lightly browned on all sides. Once the chicken is partially cooked, add the sliced onion, sliced garlic, and julienned ginseng to the pan. Sauté everything together until fragrant, allowing the aroma of the ginseng to fill your kitchen and whet your appetite.
Step 4
Meanwhile, in a separate pot, bring a generous amount of water to a rolling boil with about 1 tablespoon of salt. Add your pasta and cook for approximately 7 minutes, or according to package directions for al dente. When the pasta is almost done, pour the prepared Samgyetang broth into the pan with the sautéed ingredients. Add the mashed ginseng (prepared in step 1) to the broth in the pan to enhance its rich, comforting flavor.
Step 5
Drain the cooked pasta and immediately add it to the pan with the broth and sautéed ingredients. Stir continuously over medium heat, allowing the pasta to absorb the delicious broth and cook through. Once the pasta is tender and the sauce has thickened slightly, reduce the heat to low. Add 1 tablespoon of butter and 1 teaspoon of Grana Padano cheese (or Parmesan). Stir gently until the butter and cheese are melted and well combined, adding a creamy, savory finish.
