As summer approaches, here’s a unique Gambas recipe that’s both healthy and delicious for the whole family. We’ve added precious Korean ginseng to the classic Gambas, mellowing out any bitterness and infusing it with a subtle, delightful aroma. Even the kids love it, calling it a tasty, healthy snack!   • 30 large cocktail shrimp, peeled and deveined
  • 5 cloves garlic, thinly sliced
  • 1 small Korean ginseng root
  • 20 dried red chili peppers (or 3-4 dried whole chilies)

  • Olive oil (enough to generously cover ingredients)
  • 1 Tbsp coarse salt
  • 10 whole black peppercorns

Cooking Instructions

Begin by thoroughly washing the Korean ginseng root to remove any dirt. Slice it thinly into coin-like pieces. If the ginseng is large, you can cut it in half lengthwise before slicing.

Rinse the cocktail shrimp under cold water to thaw and pat them completely dry with paper towels. Thinly slice the garlic and prepare the dried red chili peppers (you can break them or leave them whole).

Pour a generous amount of olive oil into a deep pan or pot. You’ll want enough oil so that the ingredients are about halfway submerged.

Heat the olive oil over medium-low heat. Add the sliced garlic and gently sauté until fragrant, being careful not to burn it. You’re looking for a gentle, aromatic garlic infusion. (Note: You can adjust the amount of garlic to your preference or omit it entirely if you prefer less garlic flavor. If you want to focus purely on the ginseng, simply skip the garlic.)

Once the garlic is lightly golden, add the sliced ginseng to the pan. Adding the ginseng slightly after the garlic helps preserve its delicate aroma. As the ginseng cooks, it will release a wonderful, subtle fragrance that blends beautifully with the olive oil.

When the ginseng starts to release its aroma, add the dried red chili peppers to introduce a touch of heat. Feel free to add more chilies if you enjoy a spicier kick.

Now, add all the prepared cocktail shrimp to the pan. If you haven’t pre-seasoned the shrimp with salt, add 1 tablespoon of coarse salt now to season them. (For an even more flavorful and tender shrimp, you can lightly salt them beforehand.)

Cook the shrimp for about 5 more minutes over medium-low heat, stirring occasionally. The shrimp are done when they turn pink and opaque. Be careful not to overcook them, as they can become tough.
