Cooking Instructions
Step 1
Let’s start with delicious chicken! Cut the chicken into bite-sized pieces. Place the chicken in a bowl and pour in milk to soak for about 10 minutes. This step helps to make the chicken extra tender and juicy.
Step 2
Finely mince the red and green chili peppers after washing them. Removing the seeds will help control the level of spiciness.
Step 3
The secret to aroma! Peel and thinly julienne the ginger. A quick rinse in cold water and draining will give the ginger a cleaner flavor. In a small bowl, whisk together the sauce ingredients: soy sauce (1 Tbsp), water (3 Tbsp), vinegar (1/2 Tbsp), sugar (2 tsp), and starch (1 tsp). Set the sauce aside.
Step 4
Drain the milk from the chicken and pat it thoroughly dry with paper towels. Removing excess moisture is crucial for achieving a good sear and flavor. In the same bowl, combine the chicken with herb salt (1/2 tsp), cooking wine (1 Tbsp), sugar (1 Tbsp), minced garlic (1 Tbsp), and the minced chili peppers. Mix well and let it marinate for about 10 minutes, allowing the flavors to penetrate.
Step 5
Add 2 Tbsp of frying powder to the marinated chicken and toss gently to coat. This light coating will help the chicken become delightfully crispy when fried.
Step 6
Heat 2 Tbsp of cooking oil in a skillet over medium-high heat. Add the coated chicken pieces in a single layer and sear until golden brown on the bottom. Once browned, flip the pieces and cook the other side until equally golden and cooked through. Aim for a satisfyingly crisp exterior.
Step 7
While the chicken is searing, clean the skillet if necessary, or use a separate pan. Add the drained julienned ginger and the prepared sauce to the pan. Stir in the gochugaru (1/2 Tbsp). Bring the sauce to a gentle simmer over medium heat. Ensure the ginger is well-drained before adding it.
Step 8
Add the seared chicken to the simmering sauce. Toss quickly to coat the chicken evenly with the sauce. Cook for just a minute or two until the sauce thickens slightly and clings to the chicken. Avoid overcooking to maintain the chicken’s tenderness.
Step 9
Your aromatic Ginger-Glazed Roasted Chicken Bites are ready! Serve immediately on a warm plate. Enjoy the wonderful harmony of fragrant ginger, savory chicken, and a touch of sweet and spicy sauce. This dish is sure to be a hit!
