It’s a delightful dish made from cooked flour and egg batter, then sautéed with flavorful cheese, often referred to as German egg noodles or even a type of cheese spätzle. In this recipe, we’ll be adding a special twist by using corn flour for a unique texture and the sweet, savory pop of corn! This German-style pasta is wonderfully simple yet rich in flavor. Let me guide you through my personal recipe for this delightful dish!

  • Coarse salt 1 teaspoon

First, the special touch of this recipe! Instead of regular flour, we’ll use corn flour (or cornstarch) to create a dough with a unique texture and flavor.

In a bowl, combine 1 paper cup of corn flour, 1 egg, and 1 teaspoon of coarse salt.

Using a spatula or spoon, gently mix the ingredients until they form a well-combined, cohesive dough. If the dough seems too stiff, you can add a very small amount of water (1-2 teaspoons) to reach a workable consistency.

Bring a large pot of generously salted water to a rolling boil. Once boiling, drop small pieces of the dough into the boiling water, much like making hand-pulled noodles (sujebi). Try to leave some space between the pieces so they don’t stick together.

[Pro Tip 1] If you want to avoid getting dough on your hands, use two spoons. Place a generous spoonful of dough on one spoon, and then use the edge of the other spoon to scrape it off into the boiling water. This method allows for neat dough dropping.

The dough pieces are cooked when they float to the surface. Once they float, use a slotted spoon or strainer to remove them from the water and drain any excess liquid.

Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter is melted, add the drained corn pasta dough and sauté lightly.

Add the chopped onion, minced garlic, and 2 tablespoons of canned corn kernels to the skillet. Sauté until the onions become translucent and fragrant. Then, add the chopped processed cheese. Continue to stir and cook until the cheese is melted and thoroughly combined with the other ingredients.

[Pro Tip 2 for Extra Richness] While the dish is delicious as is, for an even richer and more decadent cheese flavor, after step 7, sprinkle 1 handful of mozzarella cheese over the top. Microwave for about 2 minutes, or until the mozzarella is melted and gooey. This will significantly enhance the flavor!
