If you have fresh abalone, you might enjoy it raw as sashimi. However, if it’s been in the refrigerator for a while and you’re hesitant to eat it raw, try turning it into a delicious stir-fried abalone dish to serve with your meal. This recipe transforms slightly chilled abalone into a flavorful delicacy.

Ingredients
  • 8 live abalones
  • 20 whole garlic cloves
  • 2 Tbsp cooking oil
  • 20g butter

Cooking Instructions

Step 1

Prepare the whole garlic cloves. If the garlic cloves are small, keep them whole. If they are large, cut them in half to a manageable size for cooking.

Step 2

Clean the abalones thoroughly. Scrub the outer shells with a brush to remove any dirt or debris. Then, carefully insert the tip of a spoon between the shell and the abalone meat at the pointed end and gently pry them apart. Step 3

Separate the abalone meat from the innards. For this recipe, we will not be using the innards. You can freeze the innards to use later for making abalone porridge. If the abalone has been in the refrigerator for an extended period and you are concerned about freshness, it’s best to discard the innards for safety.

Step 4

Score the abalone meat. You can also simply cut the abalone meat into bite-sized pieces first and then stir-fry it. Scoring the meat allows for better flavor absorption and a more tender texture.

Step 5

Heat the cooking oil in a pan over medium heat. Add the whole garlic cloves and stir-fry them until they become fragrant and lightly golden. Be careful not to burn the garlic.

Step 6

Once the garlic is about halfway cooked and slightly softened, add the prepared abalone meat to the pan. Stir-fry them together with the garlic.

Step 7

When the abalone is about halfway cooked, add the butter (20g) to the pan. Continue to stir-fry until the butter is melted and evenly coats the abalone and garlic. Season with salt and pepper to taste for a delicious finish.

Transfer the cooked abalone to a serving dish and enjoy your delicious meal!
