While I personally love the eggplant rolls, the fried dumplings are especially delightful. The crispy exterior gives way to a savory, slightly spicy filling made from the garlic stir-fried noodles, offering a unique charm distinct from kimchi dumplings. I’m making them again today! Cooking Instructions

Step 1

Step 2

Let’s start with the eggplant rolls! We’ll be slicing the eggplant thinly. Using a peeler is much easier and creates more uniform slices than a knife, resulting in prettier rolls!

Lightly brush the thinly sliced eggplant with sesame oil. Then, place the slices in a pan heated over low heat. Since the eggplant is sliced thinly, it won’t take long to cook. Just lightly pan-fry them.

On each cooked eggplant slice, place one rice cake and a portion of the garlic stir-fried noodles. Then, carefully roll up the eggplant to form the rolls.

Using the same pan you used for the eggplant, gently pan-fry the formed eggplant rolls again for a moment. This will enhance the eggplant’s flavor and help the ingredients meld together beautifully.
