Try making this delicious seasoned garlic scape dish with fresh, seasonal garlic scapes! Even those from China are tender and not tough during this season, making them perfectly delicious to eat raw. While I don’t often buy garlic itself, garlic scapes are something I find myself purchasing due to their unique flavor and crisp texture. In fact, since living in Singapore, I’ve learned to appreciate fresh and good quality ingredients regardless of their origin. When garlic scapes are this tender, they can be seasoned directly without any pre-salting, which makes the process wonderfully simple and quick. However, while it’s tasty right away, letting it mature in the refrigerator for about a week will deepen its flavors considerably, making it even more delicious. If you enjoy a spicier kick, you can eat it immediately, but I recommend letting it sit for a bit to mellow. Ingredients
  • 1 bunch Garlic Scapes

Seasoning
  • 4 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Sweet Rice Porridge (Chapssalpul)
  • 5 Tbsp Oligodang (corn syrup/oligosaccharide)
  • 2 Tbsp Fish Sauce (Myeolchi Aekjeot)
  • 1 tsp Salt (adjust to taste)
  • 2 Tbsp Sugar (adjust to taste)
  • 2 Tbsp Toasted Sesame Seeds
  • Scallions (appropriate amount)

Cooking Instructions

Step 1

Wash the fresh garlic scapes thoroughly under running water and prepare them. Trim off any yellowish leaves or dirty parts.

Step 2

Cut the prepared garlic scapes into bite-sized pieces, about 5 cm (2 inches) long. Cutting them to a suitable length will make them easier to eat.

Step 3

In a large bowl, combine 4 Tbsp gochujang, 4 Tbsp gochugaru, 2 Tbsp sweet rice porridge, 5 Tbsp oligodang, 2 Tbsp fish sauce, 1 tsp salt, and 2 Tbsp sugar. Stir well until the seasoning paste is evenly mixed. The sweet rice porridge will make the seasoning smoother and more delicious.

Step 4

Add the cut garlic scapes to the seasoning bowl. Gently mix them with your hands, ensuring the seasoning coats each scape evenly. You can also finely chop some scallions and add them at this stage for extra flavor.

Step 5

While delicious immediately, for an even deeper flavor and softer texture, transfer the seasoned garlic scapes to an airtight container and refrigerate for about a week. This aging process allows the flavors to meld beautifully. If you prefer a spicier taste, you can skip the aging step.

Step 6

Transfer the deliciously seasoned garlic scape muchim to a serving dish. Sprinkle generously with toasted sesame seeds for a nutty finish. Enjoy this wonderful side dish with your rice!
