Main Ingredients

  • 4 Young Chickens (approx. 500-600g each)
  • 1 cup Soju (for removing chicken odor)
  • 4 Roots of Ginseng
  • 16 Cloves Whole Garlic
  • 8 Dried Jujubes (Dates)
  • Rice Water (for boiling chicken)
  • 1 Tbsp Whole Peppercorns
  • 2 Roots of Astragalus (Huangqi)
  • 1/2 cup Scallion Roots

Seasoning & Garnish

  • Salt (to taste)
  • Toasted Sesame Seeds (for garnish)
  • Black Pepper (to taste)
  • Chopped Scallions (for garnish)

Cooking Instructions

Step 1

Begin by thoroughly cleaning the young chickens. Remove any internal organs and excess fat. Rinse them under cold running water. Then, soak the chickens in a mixture of 1 cup of soju diluted in water for about 30 minutes. This step is crucial for eliminating any unwanted gamey smell from the chicken.

Step 2

In a large pot, add enough rice water to fully submerge the chickens and bring it to a boil over high heat. Once the rice water reaches a rolling boil, proceed to the next step.

Step 3

To ensure a clear and clean broth, prepare a mesh bag or cheesecloth. Place 1 tablespoon of whole peppercorns, 2 roots of astragalus, and 1/2 cup of scallion roots inside the bag and tie it securely. This makes it easy to remove the aromatics later.

Step 4

Carefully stuff the cavity of each chicken (after removing from the soju soak) with the prepared filling ingredients. Generously pack in the 4 roots of ginseng, 16 whole garlic cloves, and 8 dried jujubes. Filling the chicken this way, instead of using glutinous rice, adds significant nutritional value and health benefits.

Step 5

Gently place the stuffed chickens and the mesh bag of aromatics into the boiling rice water. Reduce the heat to medium-low and simmer until the chicken is tender and cooked through, typically for 40 minutes to 1 hour, depending on the size of the chickens. Skim off any foam or scum that rises to the surface during cooking for a clearer broth.

Step 6

Once the chicken is fully cooked and tender, carefully remove the chickens and the mesh bag from the pot. Transfer one chicken to an individual earthenware pot (ttukbaegi). Ladle in enough of the flavorful broth to generously cover the chicken. Simmer on low heat for another 5-10 minutes to further deepen the flavors within the ttukbaegi.

Step 7

Serve the hot ttukbaegi samgyetang immediately. Season with salt and pepper to your preference. Garnish with chopped scallions and toasted sesame seeds. Enjoy this incredibly delicious and immunity-boosting Garlic Samgyetang while it’s piping hot! Wishing you good health today!♡
