- 7 cloves garlic (4 large cloves thinly sliced, the rest minced)
- 1 serving of cooked rice (day-old or firm rice recommended)
- 1 piece of butter (approx. 10g)

Step 1
First, prepare the garlic. Thinly slice 4 large cloves and finely mince the remaining smaller cloves. This step maximizes the garlic’s rich aroma.
Step 2
Prepare the rice. Using day-old or firm rice, rather than freshly cooked, results in a fluffier and more delicious fried rice. Gently loosen the rice to prevent clumping.
Step 3
Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced garlic first to infuse the oil with its aroma. Once the sliced garlic begins to turn golden, add about half of the minced garlic and stir-fry together.

Reduce the heat to low. Stir continuously to prevent the garlic from burning. Fry the sliced garlic until golden brown on both sides to bring out its sweet flavor. Be extra careful with the heat as the garlic starts to turn a deeper brown.

Turn off the heat temporarily. Place the piece of butter, flattened slightly, on one side of the pan. The residual heat will melt the butter quickly, allowing it to blend smoothly with the garlic.

Add the prepared rice over the melted butter and sautéed garlic. Drizzle 1 tablespoon of soy sauce over the rice. Using a spatula, gently mix the rice, garlic, and butter together, coating each grain of rice, being careful not to mash the rice.

Finally, add the remaining minced garlic and mix well throughout the rice. If you prefer a drier, more separated texture for your fried rice, continue to cook over low heat, stirring occasionally, until the excess moisture evaporates. Your delicious garlic fried rice is ready!
