Main Ingredients
  • 1 can corn, drained
  • 4 strips bacon, chopped
  • 2 Tbsp minced garlic
  • 1 Tbsp butter
  • 200g mozzarella cheese
  • 1 tsp sugar
  • 1 pinch salt
  • 1 pinch black pepper

Topping
  • 1 tsp dried parsley

Cooking Instructions

Step 1

First, thoroughly drain the canned corn using a sieve. Removing excess moisture is key to achieving a richer, more delicious cheesy corn.

Step 2

In a frying pan over medium heat, add the chopped bacon and cook until crispy. I find it easiest to cut the bacon into bite-sized pieces with kitchen scissors before frying.

Step 3

Once the bacon is nicely crisped, add the minced garlic to the pan and sauté alongside the bacon.

Step 4

Reduce the heat to low immediately, as minced garlic can burn quickly. Sauté just until fragrant and slightly golden, about 30 seconds to 1 minute, to bring out its aroma without bitterness.

Step 5

Add the drained corn to the pan and stir-fry with the bacon and garlic for about 2 minutes, allowing the corn to absorb the flavors.

Step 6

Keeping the heat on low, add the butter and sugar. Stir until the butter is completely melted and well combined with the corn mixture. This step adds a lovely sweetness and richness.

Step 7

Generously sprinkle the mozzarella cheese over the top, followed by a pinch of black pepper for extra flavor.

Step 8

Cover the pan with a lid and let it cook on very low heat until the cheese is fully melted, about 3-5 minutes. Keep an eye on it to prevent burning.

Step 9
