Main Ingredients

  • 10 fresh medium or large shrimp
  • 5 cloves garlic
  • 1/2 cup (approx. 100ml) extra virgin olive oil
  • 1 Tbsp butter (approx. 15g)
  • 1/3 tsp dried red chili flakes (adjust to taste)
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, peel the 5 cloves of garlic. Slice them thinly into ‘coins’ (almonds). Slicing them thinly helps their flavor infuse beautifully into the olive oil.

Rinse the 10 fresh shrimp under cold water. Peel them, leaving the tails on if you prefer, and devein them by making a shallow cut along the back. Pat the peeled shrimp dry with paper towels.

Melt 1 Tbsp of butter in a pan over low heat. Once melted, add the sliced garlic and 1/3 tsp of dried red chili flakes. Sauté gently, stirring frequently, until the garlic is fragrant and lightly golden, being careful not to burn it. Season with a pinch of freshly ground black pepper and a small pinch of salt. (It’s best to under-season at this stage as the shrimp will also add flavor and salinity).

Pour in 1/2 cup of extra virgin olive oil. Arrange the prepared shrimp in a single layer in the pan. Continue to cook over low heat for about 3-5 minutes, or until the shrimp turn pink and are cooked through and plump. Once the shrimp are done, remove from heat and serve immediately. This dish is best enjoyed hot, so have your crusty bread or baguette ready for dipping!
