Delicious Spicy Pork Stir-fry Made with Pear Nectar, Chef Eonamseon’s Recipe
It feels like a while since I last posted a recipe! Today, I’m sharing a reliable and incredibly delicious recipe for Jeyuk Bokkeum (spicy stir-fried pork) from Chef Eonamseon’s ‘Pyeonstorang’ (a Korean cooking show). We’ll be using pear nectar for a uniquely tender and flavorful result. This recipe is so good, it’s become a go-to in my kitchen!
Main Ingredients- Pork shoulder (front leg) 565g (Pat dry to remove blood and cut into bite-sized pieces)
- 1 Onion (sliced into thick strips, about 0.5cm wide)
- 2 Green Onions (sliced diagonally, about 1cm thick)
- 1 can Pear Nectar Drink (340ml)
Spicy & Sweet Marinade- 2 Tbsp Sugar
- 3 Tbsp Soy Sauce
- 3 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Minced Garlic
- 2 Tbsp Vinegar (added at the end)
- 1 Tbsp Sesame Oil (added at the end)
- 2 Tbsp Sugar

Cooking Instructions
Step 1
Gently pat dry the pork shoulder with paper towels to remove any excess blood. This step is crucial for a clean, savory flavor without any gamey taste. Once the blood is removed, cut the pork into bite-sized pieces, approximately 3-4 cm (1.5 inches).
Step 2
In a large mixing bowl, combine 2 Tbsp sugar, 3 Tbsp soy sauce, and 3 Tbsp gochujang. Pour in 1 can (340ml) of pear nectar drink. Stir well with a spoon or whisk until all the marinade ingredients are thoroughly blended together. Stir in 2 Tbsp of minced garlic to enhance the aroma and flavor.
Step 3
Add the cut pork pieces to the prepared marinade. Using your hands, gently massage the marinade into the pork, ensuring every piece is evenly coated. For the best flavor, let the pork marinate for at least 10 minutes, or longer if time permits.
Step 4
To the marinated pork, add 2 Tbsp of vinegar and 1 Tbsp of sesame oil. Mix gently again. The vinegar helps to tenderize the meat and balance the flavors, while the sesame oil adds a lovely sheen and nutty aroma.
Step 5
Arrange the diagonally sliced green onions (about 1cm thick) over the marinated pork. The refreshing aroma of the green onions will complement the rich pork flavor beautifully.
Step 6
Layer the thickly sliced onion (about 0.5cm wide strips) on top of the green onions. Slicing the onion thickly will help it retain a pleasant bite even after cooking, preventing it from becoming too mushy.
Step 7
Sprinkle a pinch of salt over the layered vegetables. This simple step draws out a little moisture from the vegetables, keeping the dish juicy and enhancing the overall flavor.
Step 8
Heat a wok or large pan over medium-high heat. Add only the marinated pork to the hot pan. Avoid stirring immediately; let the pork cook undisturbed for a minute or two until it starts to brown and release its juices. Once the sauce begins to thicken slightly and the pork shows a bit of color, then begin to stir-fry. Add the prepared vegetables and any remaining marinade sauce to the pan and continue to stir-fry until the vegetables are tender-crisp and the pork is fully cooked.
Step 9
Add the remaining 1 Tbsp of minced garlic to the pan. Stir well to distribute the garlic, allowing its potent aroma to infuse into the dish.
Step 10
Cover the pan with a lid, reduce the heat to low, and let it simmer for an additional 3 minutes. This final step allows all the flavors to meld together perfectly, ensuring the Jeyuk Bokkeum is tender, juicy, and incredibly delicious. Enjoy your homemade masterpiece!
