Who says a dish for guests has to be complicated? Today, I’m sharing a super simple recipe for Frozen Skate and Bean Sprout Stew, perfect for using up that skate stored in your freezer. It’s an easy yet impressive dish that’s sure to be a hit!

Main Ingredients

  • 1/2 frozen skate
  • 450g bean sprouts
  • 1 bunch chives
  • 2 green onions
  • A pinch of sesame seeds
  • 1 Tbsp cornstarch
  • 2 Tbsp cold water

Seasoning Ingredients

  • 5 Tbsp red pepper flakes
  • 3 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp mirin (rice wine)
  • 1 clove garlic (size of a thumb, minced)
  • 2 Tbsp minced garlic
  • 1/2 Tbsp salt
  • 1/2 Tbsp black pepper
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, let’s make some anchovy broth. In a pot, combine 2 cups of water (using a paper cup as a standard measure) and 6 dried anchovies. Bring to a boil over high heat, then reduce to medium heat and simmer for another 10 minutes to create a rich anchovy broth.

Thaw the frozen skate in the refrigerator before cooking. (Quick thawing can make the flesh mushy.)

Once thawed, cut the skate into 3 pieces, following the grain of the flesh. Don’t make them too thick, or they will take longer to cook.

In a deep pan or pot, pour in the prepared anchovy broth and add the cut skate.

Arrange the cleaned bean sprouts (450g) on top of the skate.

Cover the pot tightly and cook over high heat for exactly 5 minutes. Frozen skate cooks very quickly, so overcooking can make the texture too soft. Turn off the heat immediately after 5 minutes.

Reserve about 1/2 cup of the cooking liquid and discard the rest. If there’s too much liquid, the sauce might be too diluted. Carefully remove the skate from the pot and place it on a separate plate to cool slightly.

Now, let’s make the delicious seasoning sauce. In a bowl, combine 5 Tbsp red pepper flakes (add more if you like it spicier), 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp mirin, 1 minced clove of garlic (about thumb-sized), 2 Tbsp minced garlic, 1/2 Tbsp salt, 1/2 Tbsp black pepper, 1 Tbsp sugar, and 1 Tbsp sesame oil. Mix everything well. (Measurements are based on a paper cup and a standard adult tablespoon.)

Wash the chives and cut them into 3-4cm lengths. Slice the green onions (or scallions) into similar lengths. (Tip: If you have some crown daisy or minari, it adds a wonderful aroma!)

Return the pan with the remaining broth to medium heat. Add the prepared seasoning sauce and toss the bean sprouts and chives gently to coat them evenly with the sauce. Now, prepare the cornstarch slurry: In a small bowl, mix 1 Tbsp cornstarch with 2 Tbsp cold water. (Tip: You can mix the cornstarch slurry in the same bowl you used for the sauce to avoid waste!) Gradually pour the slurry into the pan while stirring constantly until the sauce thickens to your desired consistency.

Once the bean sprouts and chives are nicely coated and cooked in the sauce, sprinkle a generous amount of sesame seeds on top for a nutty flavor.

Arrange the sauced bean sprouts and chives attractively on the bottom of a serving plate. Then, carefully place the cooked skate on top of the vegetables.
