These fried anchovies have a delightfully crispy texture, reminiscent of perfectly fried snacks. Main Ingredients

  • 200g medium anchovies
  • 20g green onion (scallion)
  • 3 Tbsp sugar
  • 1/2 tsp salt
  • 3-4 Tbsp cooking oil

Cooking Instructions

Place the medium anchovies (200g) into a dry, preheated pan without any oil. Stir-fry over medium-low heat for about 10 to 15 minutes. This crucial step helps to remove any residual moisture and the fishy smell, making the anchovies extra crispy. Keep stirring to prevent burning.

Transfer the stir-fried anchovies to a fine-mesh sieve. Gently shake the sieve to remove any fine powder or small broken pieces. This ensures a clean and pleasant texture in the final dish.

Thinly slice the garlic cloves into slivers. Finely chop the green onion, making sure it’s a bit smaller than the anchovies. You’ll need about 20g of chopped green onion.

Now, it’s time to cook. Add a generous 3 to 4 tablespoons of cooking oil to the pan. Once the oil is warm, add the sliced garlic and chopped green onion. Sauté over medium-low heat until fragrant and lightly golden.

When the garlic and green onions become translucent and fragrant, add the sieved anchovies to the pan. Mix well to combine. Sprinkle in the sugar (3 Tbsp) and salt (1/2 tsp), and stir quickly to distribute the seasoning evenly. Cooking over medium heat is recommended to prevent the sugar from burning.

Once all the ingredients are beautifully combined and the aroma is irresistible, transfer the finished fried anchovies to a serving dish. They are delicious served warm, but will become even crispier if allowed to cool completely.
