Basic Ingredients

  • 5 eggs
  • 3 handfuls frozen vegetables (approx. 1.5 cups)
  • 1 handful katsuobushi (approx. 0.5 cups)
  • Tonkatsu sauce (or Okonomiyaki sauce)
  • Mayonnaise

First, prepare all the ingredients needed for the dish. Starting your cooking with fresh ingredients makes it more enjoyable.

Prepare your leftover vegetables. I used 3 handfuls of frozen vegetables, but any vegetables you have in the fridge will work well. Try using a variety of vegetables like bell peppers, carrots, broccoli, or green beans!

Finely chop the prepared vegetables into bite-sized pieces. It’s good to chop them considering your child’s chewing texture so that they can eat them without any issues.

In a bowl, combine the chopped vegetables and 5 fresh eggs. Whisk them together thoroughly. Crucially, do not add any water! The moisture from the vegetables is sufficient, and adding water can turn it into a soft, steamed egg dish rather than the characteristic Okonomiyaki texture.

Stir well until the vegetables and eggs are smoothly combined without any lumps. Ensuring all ingredients are evenly mixed will make it taste better when cooked.

Heat a medium-sized frying pan with a generous amount of cooking oil over high heat. Preheating to around level 8 on an induction cooker is recommended.

Once the pan is hot, reduce the heat to medium (level 5-6 on induction) and carefully pour the Okonomiyaki batter into the pan. Spread it evenly across the pan.

Cover the pan with a transparent lid and cook slowly over medium heat for about 5 minutes. Do not flip it during this stage. Once you confirm the top surface of the egg is cooked and the edges are lightly golden, turn off the heat.

Drizzle tonkatsu sauce (or Okonomiyaki sauce) in a zig-zag pattern over the cooked Okonomiyaki according to your preference, then artfully swirl mayonnaise on top. Finally, generously sprinkle with katsuobushi.
