Opened the fridge and found nothing appealing? Seeing those eggs made me think of omurice! Today, we’re making omurice! It’s a perfect way to use up leftover kimchi, spam, and vegetable banchan (side dishes) to create a delicious fried rice, all wrapped in a cloud-like egg blanket. Let’s make a simple yet satisfying homemade meal!

Ingredients

  • 3 eggs
  • A small amount of kimchi
  • 1/2 can of Spam
  • 1/2 portion of leftover vegetable banchan
  • 1 bowl of leftover cooked rice (chawal)
  • 1/2 Tbsp sugar
  • A little cooking oil

Cooking Instructions

Step 1

First, finely chop the key ingredients for the omurice: Spam, kimchi, and any leftover vegetable banchan you have in the fridge. Dice the Spam into about 1cm cubes. For the kimchi, remove the tough core and chop it finely so it mixes well with the rice when stir-fried. Cut the banchan into bite-sized pieces.

Heat about 1 tablespoon of cooking oil in a pan over medium heat. Add the diced Spam and stir-fry until it’s golden brown. The fat rendering from the Spam will add a nice flavor.

Once the Spam is cooked to a certain extent, add the chopped vegetable banchan and stir-fry them together. Cook until the vegetables are tender and well combined with the Spam.

Instead of adding the kimchi with the other ingredients right away, push the cooked ingredients to one side of the pan. Add the kimchi to the empty space and stir-fry it separately for a moment before mixing everything together. This helps to preserve the kimchi’s flavor and eliminate any potential gamey odors from the rice.

If the kimchi tastes too sour, add 1/2 tablespoon of sugar while stir-frying. The sugar will mellow out the sourness, creating a more balanced flavor profile for the entire fried rice.

Once the stir-fried ingredients are well mixed, add the leftover cooked rice. Use a spatula to break up any clumps of rice and mix everything thoroughly. It’s important to stir-fry until each grain of rice is coated with the seasoning. Continue to stir-fry until the rice becomes slightly crispy.

Now, let’s make the egg blanket. Crack 3 eggs into a bowl, remove the chalaza (the stringy white part), and gently whisk them with a fork or whisk until just combined. Don’t over-whisk; just mix the yolks and whites until they are blended. This gentle mixing helps achieve a fluffy texture. For an even smoother egg blanket, strain the egg mixture through a fine-mesh sieve. Heat a generous amount of cooking oil in a non-stick pan over medium-low heat. Pour in the whisked egg mixture. Use chopsticks to gently stir the edges of the setting egg, guiding the uncooked egg towards the edges to create a soft, fluffy omelet. Be careful not to break the circular shape too much, and avoid overcooking.

Carefully spoon the well-stir-fried rice onto a plate, shaping it into a mound. You can pack the fried rice into a bowl and then invert it onto the plate for a neat presentation.

Finally, gently place the fluffy egg blanket you just made over the fried rice. Carefully lay it on top to avoid tearing the egg. Your delicious omurice is now complete! Feel free to add ketchup on top to your liking.
