I made a delightful bruschetta perfect for this wonderful weather! I’ve diced sweet cherry tomatoes and some fresh, in-season onion, along with fragrant basil. The classic combination of tomatoes, basil, balsamic vinegar, and olive oil is always a winner, and adding bread makes it absolutely irresistible. It’s a crowd-pleaser that’s perfect for gatherings!
Main Ingredients- 10 cherry tomatoes (like Date tomatoes)
- 10 slices of baguette (approx. 0.5-1cm thick)
- 6 fresh basil leaves
- 1/4 onion
For Toasting Baguette- 1.5 Tbsp salted butter
- 1 Tbsp minced garlic
- 2 Tbsp oligosaccharide (or honey)
- 1 Tbsp olive oil
- Pinch of dried parsley (optional)
Zesty Sauce- 2 Tbsp extra virgin olive oil
- 2 Tbsp oligosaccharide (or honey)
- 1 Tbsp fresh lemon juice
- 1 Tbsp balsamic vinegar
- A small pinch of salt

Cooking Instructions
Step 1
First, prepare the butter mixture for the baguette. Place the butter in a small bowl and melt it gently over a double boiler (bain-marie). Stir occasionally until it’s completely melted.

While the butter is melting, start preparing the fresh ingredients. Wash the cherry tomatoes, pat them dry, and dice them into small pieces. Dicing them finely will help the sauce blend better.

Peel and finely mince the onion. If you find raw onion a bit strong, you can soak the minced onion in cold water for about 5 minutes, then drain it thoroughly.

Wash the fresh basil leaves, dry them, and chop them finely to a similar size as the onion. Try not to over-chop the basil to preserve its fresh aroma.

Add the minced garlic to the melted butter and mix well. Infusing the butter with garlic adds a wonderful flavor when the baguette is toasted.
