  • 1/4 small Onion
  • 1 Green Chili (adjust to spice preference)
  • 2 pinches Salt
  • 2 pinches Black Pepper
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp fresh Lemon Juice

Start by preparing 1 Zespri Green Kiwifruit for optimal freshness and flavor. Choose one that yields slightly to gentle pressure, indicating ripeness.

Trim the ends off the kiwifruit. Then, carefully peel the skin using a paring knife or a spoon. It’s important to have clean, peeled fruit for this recipe.

Dice the peeled kiwifruit into uniform, approximately 0.5 cm (about 1/4 inch) cubes. This size ensures a pleasant texture in the salsa; too large might be overwhelming, too small could turn mushy.

Finely mince 1/4 of a small onion. If the onion’s pungency is a concern, you can soak the minced onion in cold water for a few minutes, then drain thoroughly to mellow its flavor.
