Fresh Winter Oyster Salad Recipe
A Winter Delicacy Like No Other! Introducing Spicy and Sweet Fresh Oyster Salad~
We’ve made a delicious and savory seasoning to perfectly mix with fresh, seasonal oysters. Try this delightful winter oyster salad!
Main Ingredients- 200g fresh oysters
- 100-120g thinly julienned radish
Spicy & Sweet Dressing- 5 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp sugar
- 1/5 Tbsp ginger powder (or a tiny pinch of fresh grated ginger)
- 1 Tbsp minced garlic
- 2 Tbsp corn syrup or rice syrup (for shine and sweetness)
- 1 Tbsp chopped green onion
- 16cc soy sauce (approx. 1 Tbsp)
- 16cc anchovy sauce (fish sauce, approx. 1 Tbsp)
- 40cc mirin (rice wine, approx. 2.5 Tbsp)
- 8cc sesame oil (approx. 1/2 Tbsp)
- 0.5 Tbsp toasted sesame seeds
- 5 Tbsp gochugaru (Korean chili powder)

Cooking Instructions
Step 1
Gently rinse the fresh oysters under running water just enough to remove any debris. Avoid washing them too vigorously, as this can diminish their natural flavor. Drain them thoroughly in a sieve for about 30-40 minutes to ensure all excess water is removed; this prevents the salad from becoming watery. Thinly julienne the radish to about 1mm thickness.
Step 2
In a large bowl, combine all the dressing ingredients: gochugaru, sugar, ginger powder, minced garlic, corn syrup, chopped green onion, soy sauce, anchovy sauce, mirin, sesame oil, and toasted sesame seeds. Mix well with a spoon until you have a smooth, flavorful dressing. Add the julienned radish to the dressing and gently toss to coat evenly.
Step 3
Once the radish is well coated with the dressing, carefully add the well-drained oysters. Mix gently, using your fingertips or the back of a spoon, being careful not to crush the oysters. Gentle mixing is key to maintaining the oysters’ texture.
Step 4
Your delicious fresh oyster salad with crunchy radish and a spicy-sweet dressing is ready! Serve it immediately. It’s a fantastic side dish for rice or a perfect accompaniment to a cold glass of makgeolli (Korean rice wine).
