Create a delightful no-bake Strawberry Tiramisu dessert using readily available fresh strawberries and soft sponge cake (castella). This recipe allows you to generously layer strawberries and mascarpone cream, resulting in a rich flavor and beautiful presentation. It’s perfect for gifting on special occasions or enjoying with your coffee on a leisurely afternoon.
Essential Ingredients- 1 Castella cake (approx. 150-160g)
- 150g Mascarpone cheese
- 200g Heavy cream (whipping cream)
- 15g Sweetened condensed milk
- 5 fresh strawberries (for topping)
- A few mint leaves (for garnish)
- 2 Tbsp Powdered sugar
Strawberry Puree Ingredients- 150g fresh strawberries
- 15g Granulated sugar
- 10g Lemon juice
- 150g fresh strawberries

Cooking Instructions
Step 1
First, thoroughly wash the strawberries you’ll be using. Remove the stems. For the topping, cut 5 strawberries in half and set them aside.

In a saucepan, mash the remaining strawberries (excluding the topping ones) with a fork or potato masher. This will form the base for your strawberry puree.
Step 3
Cut the castella cake into pieces that fit the size of your serving dish or cups. You’ll need approximately 150g to 160g of castella.
Step 4
Add the granulated sugar and lemon juice to the mashed strawberries in the saucepan. Mix well and cook over low heat, stirring occasionally, until the mixture slightly thickens into a puree. This is your strawberry sauce.

In a separate chilled bowl, whip the heavy cream and sweetened condensed milk using an electric mixer or whisk until stiff peaks form. Ensure the cream is thick and holds its shape.

In another bowl, gently soften the mascarpone cheese. Gradually add the whipped cream to the mascarpone cheese in three additions, folding it in carefully to maintain a light and airy texture. Mix until well combined to create a smooth mascarpone cream.

Prepare your serving dishes or glasses. Arrange the halved strawberries along the inside walls of the containers for a beautiful visual effect.

Start layering: place a layer of castella cake at the bottom, followed by a thin layer of the strawberry puree. Then, generously spoon the mascarpone cream over the puree. Repeat this layering process one more time.

Smooth the top layer of the mascarpone cream evenly using a spatula or spoon. Then, dust generously with powdered sugar using a fine-mesh sieve for a classic tiramisu finish.
