- Fresh strawberries, as needed (washed and patted dry)
- Powdered sugar, for dusting
Cooking Instructions
Step 1
Prepare all your ingredients by measuring them out. It’s best to have the eggs at room temperature for better batter emulsification. Wash and pat dry the strawberries, then slice them as desired for use inside the pancakes or as garnish.
Step 2
In a clean bowl, crack the 3 eggs. Add the 1/2 tsp of salt. Whisk vigorously with a whisk or fork until the eggs are broken up. Don’t worry about overmixing at this stage.
Step 3
Sift 1 cup of cake flour into the egg mixture. Gently mix with a whisk until just combined, without lumps. The batter will still be quite thick.
Step 4
Add the 2 Tbsp of granulated sugar and 5 tsp of grapeseed oil. Stir until the mixture is smooth and all ingredients are well incorporated. Ensure there are no remaining sugar lumps.
Step 5
Slowly pour in the 3/4 cup of milk while whisking continuously. Continue mixing until the batter reaches a smooth, pourable consistency, similar to thin pancake batter or a thick yogurt. Aim for a lump-free, fluid batter.
Step 6
Slice the prepared strawberries according to your preference. Thinly sliced strawberries, or quartered pieces, work well for filling or decorating the pancakes.
Step 7
Preheat your pancake pan over medium-low heat. Lightly grease the pan or wipe it with a paper towel to create a non-stick surface. (If using a well-seasoned non-stick pan, you may skip this step).
Step 8
Pour the batter onto the preheated pan in small portions using a ladle or measuring cup. Gently pour in a circular motion to create round pancakes of your desired size.
Step 9
Reduce the heat to low once the batter is poured. Cooking over low heat is crucial to ensure the pancakes cook through evenly without burning. Let them cook for about 2-3 minutes.
Step 10
When you see bubbles forming on the surface and the edges look slightly set, it’s time to flip. Carefully check with a spatula and flip the pancake once the bottom is golden brown.
Step 11
Cook the other side for another 1-2 minutes until golden brown. Gently press down with the spatula to ensure even cooking and a flatter pancake shape.
Step 12
Place the sliced strawberries onto the warm, cooked pancake. Adding the strawberries while the pancake is still warm helps to enhance their flavor.
Step 13
Fold the pancake in half over the strawberries, or gently roll it up, and place it neatly on a serving plate. Folding the pancake creates a lovely pocket for the strawberries.
Step 14
Dust the finished pancakes generously with powdered sugar using a sieve. This adds a beautiful snowy finish. Serve warm and enjoy your delicious creation!
Step 15
Garnish your pancakes with a few fresh strawberry slices or a sprig of mint for an extra touch of elegance. These beautiful and delicious pancakes are perfect for a special homemade cafe experience!
