Simple and Delicious Seasoned Spinach Recipe
As the weather gets colder, spinach becomes even sweeter and more delicious. This recipe offers a basic seasoned spinach (namul) that highlights its natural flavors, perfect for a healthy and vibrant addition to your meal.
Main Ingredients- 1 small bunch of spinach
- 1 tsp salt (for blanching)
Cooking Instructions
Step 1
First, prepare the spinach. Remove any yellow or wilted leaves and thoroughly wash the roots to get rid of any soil. Using only the fresh, vibrant leaves will ensure the best flavor for your seasoned spinach.
Step 2
Bring a pot of water to a rolling boil. Add 1 teaspoon of salt to the boiling water. Adding salt not only helps to maintain the spinach’s bright green color but also minimizes nutrient loss during cooking. Blanch the spinach for a very short time, about 2-3 minutes. Immediately drain and rinse the blanched spinach under cold running water. Gently separate the spinach leaves while rinsing, shaking them 2-3 times to ensure they are thoroughly cleaned and any clumps are loosened. Afterward, firmly squeeze out as much excess water as possible. Properly draining the spinach is crucial for the seasoning to adhere well and create a delicious dish.
Step 3
Place the well-drained spinach into a mixing bowl. Add all the prepared seasoning ingredients: chopped green onion, minced garlic, salt, sesame oil, and the toasted sesame seeds.

Now, gently mix and toss the spinach with the seasonings until everything is evenly combined. It’s important not to over-knead or mash the spinach. Instead, use a gentle tossing motion to ensure the seasoning coats every strand of spinach evenly. This technique preserves the texture of the spinach and allows the flavors to meld beautifully.

I personally prefer to season it slightly on the milder side to enjoy the natural sweetness of the spinach. While it might taste a little bland right after seasoning, keep in mind that the flavors will develop further. If you plan to store it in the refrigerator, it might become too bland once chilled. Therefore, you might want to adjust the initial seasoning amount or add a little more salt just before serving, especially if it’s been refrigerated.
