Begin by preparing your ingredients. Thoroughly wash the fresh spinach and ensure it’s well-drained. Have your fresh eggs ready.

Crack the 10 eggs into a clean bowl. Add the 1/2 teaspoon of salt. Use a whisk to thoroughly beat the eggs until the yolks and whites are completely combined and the mixture is smooth. Beating them well will result in a fluffier texture.

Place the washed and drained spinach on a cutting board. Finely chop the spinach into very small pieces. Chopping it finely will make it easier to roll and ensure it distributes evenly throughout the egg.

Add the finely chopped spinach to the beaten egg mixture. Gently stir with a spoon or spatula until the spinach is evenly distributed throughout the egg batter. Avoid overmixing.

Heat a non-stick skillet over medium-low heat. Lightly coat the pan with vegetable oil using a paper towel. Once the pan is warm, pour about one ladleful of the spinach and egg mixture into the pan. Tilt the pan to spread the mixture into a thin, even layer. A thin layer cooks more evenly and makes rolling easier.
