As we spend more time at home, create a refreshing salad roll packed with fresh ingredients like edible flowers, sweet fruits, and savory seafood. This dish is not only visually appealing but also incredibly delicious, perfect for a light lunch or a special occasion.

Main Ingredients

  • Mixed salad greens 300g
  • 12 fresh perilla leaves (깻잎)
  • 12 cooked and peeled shrimp
  • 1/2 cup of your favorite store-bought salad dressing
  • 12 sheets of rice paper

Cooking Instructions

As I’m responsible for the food category in our YouTube content, I chose salad rolls as they make a beautiful and healthy tea-time snack.

Prepare 12 sheets of rice paper. Dip each sheet briefly into warm water until it becomes pliable, then carefully lay it flat on a clean surface or plate. Arrange your chosen fillings – edible flowers, shrimp, and fruits – on one quarter of the rice paper. (Tip: Don’t soak the rice paper for too long, as it can become sticky and tear easily. Work quickly!)

Gently wrap the shrimp with a perilla leaf to hide it, then layer a generous amount of fresh salad greens on top of the perilla leaf. Using a variety of colorful greens will make your rolls more visually appealing.

Fold in the left and right sides of the rice paper to secure the fillings, then tightly roll it up from the bottom towards the top. While it looks simple, it can be tricky to get the technique right the first time, often leading to split rolls! Practice makes perfect, so keep trying, and you’ll master it.

While edible flowers were used in the video, I’ve used cooked shrimp for this version. Feel free to use whatever ingredients you have on hand! Adding cooked rice noodles or thin wheat noodles (somen) can also make these rolls even more satisfying.

Serve with your favorite salad dressing. You can either dip the rolls into the dressing or use a small spoon to drizzle it over. Serving the dressing on the side is more hygienic and allows each person to customize their taste.
