  • 300g fresh oysters
  • 2 eggs
  • 200ml pancake mix (about 1 cup)
  • 50ml cooking oil (generous amount)
  • Pinch of dried parsley (for garnish)

First, prepare 300g of fresh oysters. Use only the oyster meat, not the shells. Gently rinse the oysters under running cold water to remove any dirt or impurities. After rinsing, drain them thoroughly in a sieve to remove as much excess water as possible. Excess moisture can lead to soggy pancakes.

Crack 2 eggs into a bowl and whisk them until smooth using a fork or whisk. In a separate shallow dish, place 200ml of pancake mix (approximately 1 cup using a measuring cup).

Coat each oyster, one by one, with the pancake mix. Lightly shake the oysters to ensure a thin, even coating of flour. This step helps the egg batter adhere better to the oysters.

Heat 50ml of cooking oil in a non-stick pan over medium heat. Carefully place the egg-coated oysters onto the hot pan, making sure to leave some space between them so they don’t stick together. If the pan gets too hot, reduce the heat slightly.

Once the bottom side of the oyster pancakes turns golden brown and crispy (after about 2-3 minutes), carefully flip them with a spatula. Cook the other side until it’s also golden brown. Oysters cook quickly, so avoid overcooking.
