Ingredients
- 1 pint sweet cherry tomatoes
- 125g fresh mozzarella cheese (bocconcini or pearl size)
- 1/4 cucumber
- 3-4 Tbsp aloe-flavored yogurt
Cooking Instructions
Step 1
Start by preparing the fresh, in-season sweet cherry tomatoes. Wash them thoroughly under cold water and remove the stems for a clean presentation.
Step 2
Peel the cucumber thinly, slice it in half lengthwise, scoop out the seeds with a spoon, and then cut into approximately 0.5cm thick half-moons. (Alternatively, you can leave the skin on for added texture and nutrients.)
Step 3
Drain the fresh mozzarella cheese well. You can use the balls whole or gently cut them into 2-3 bite-sized pieces. Be careful not to cut them too small, as they might break apart.
