Fresh Gizzard Shad Bibimbap
Enjoy Gizzard Shad Hoe (Raw Fish Salad) and Bibimbap Simultaneously
While autumn is often called ‘Gizzard Shad Season,’ these fish are plump and delicious right now, just as good as in the fall! The small amount of innards from filleting can be made into a delightful fermented dish, or you can use leftover raw fish for a satisfying bibimbap. This recipe offers a fantastic way to enjoy the fresh, seasonal gizzard shad.
Main Ingredients
- Fresh Gizzard Shad (leftover from filleting, or gizzard shad sashimi) – a moderate amount
Spicy & Sweet Bibimbap Sauce
- Rose Vinegar 1 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Minced Garlic 1 tsp
- Toasted Sesame Seeds – a pinch
- Perilla Oil 1 Tbsp

Cooking Instructions
Step 1
First, let’s prepare the flavorful bibimbap sauce. In a bowl, add 3 tablespoons of gochujang. Stir in 1 tablespoon of rose vinegar for a sweet and tangy flavor. Add 1 teaspoon of minced garlic, 1 tablespoon of perilla oil for a nutty aroma, and a pinch of toasted sesame seeds. Mix all the ingredients well with a spoon until you have a smooth, delicious chili paste sauce.
Step 2
Now, let’s prepare the fresh gizzard shad. Clean and thinly slice the gizzard shad. (Using leftovers from filleting makes this quick!) For the spring greens, we’re using wild chives (dallae). Gently clean the wild chives, removing any dirt from the roots, and chop them into 3-4 cm lengths. Avoid cutting them too long for easier mixing. In a large bowl, combine the sliced gizzard shad and chopped wild chives. Add about half of the prepared chili paste sauce and gently mix. Be careful not to break the fish while combining.
Step 3
The gizzard shad and wild chive salad is ready, enhanced by the fresh aroma of the wild chives brought from Jeju! You can enjoy this as a side dish, but today we’re making it into a bibimbap. Place a bowl of warm brown rice in a serving bowl. Top generously with the seasoned gizzard shad and wild chive mixture. Add more chili paste sauce to your liking, and sprinkle with a few more toasted sesame seeds to finish. Your impressive gizzard shad bibimbap is ready in no time! Mix it all up and enjoy this delicious meal!
