Fresh Garden Zucchini Stir-fry Recipe

Introducing 5 delicious side dishes made with fresh vegetables lovingly grown in my brother-in-law’s small garden after his retirement. Using zucchini, eggplant, and crown daisy harvested from the garden, along with fresh vegetables from neighbors, you can quickly create healthy and tasty dishes to stock your refrigerator. Experience the joy of bringing the abundance of the garden to your dining table!

Crispy Bean Sprout Stir-fry

  • 1 bag (300g) bean sprouts
  • 1 Tbsp oyster sauce
  • 1/4 carrot
  • A pinch of sesame seeds
  • Cooking oil (vegetable oil recommended)
  • A little minced garlic

Sweet and Savory Zucchini Stir-fry

  • 1 medium zucchini
  • 1/4 carrot
  • 2 Korean green chili peppers (adjust for spiciness)
  • A little minced garlic
  • Cooking oil (vegetable oil recommended)
  • A pinch of sesame seeds
  • A little sesame oil
  • 1 Tbsp anchovy sauce (fish sauce)
  • 3 Tbsp water

Tangy and Sweet Cucumber Crab Stick Salad

  • 1 cucumber
  • 3 imitation crab sticks
  • 2 Tbsp vinegar
  • A pinch of salt
  • A pinch of sesame seeds
  • A little sesame oil
  • A little minced garlic

Aromatic Eggplant Stir-fry with Sauce

  • 2 eggplants
  • 2 Tbsp seasoning sauce (based on soy sauce, chili powder, minced garlic, green chili, sesame seeds, sesame oil)
  • 3 Tbsp water

Fragrant Crown Daisy Salad

  • 100g crown daisy
  • 1 Tbsp soy sauce
  • A pinch of sesame seeds
  • A little sesame oil

Cooking Instructions

Step 1

1. [Crispy Bean Sprout Stir-fry] First, let’s make the bean sprout stir-fry. Heat cooking oil (vegetable oil recommended) in a frying pan and sauté minced garlic until fragrant.

Once fragrant, add the bean sprouts and julienned carrots, and stir-fry quickly. Add oyster sauce for an umami boost.

When the bean sprouts are crisp-tender, turn off the heat and finish with a drizzle of sesame seeds and sesame oil for a nutty flavor.

2. [Sweet and Savory Zucchini Stir-fry] Slice the zucchini and carrot into 0.5cm thick half-moons. Finely chop the Korean green chili peppers. (If you like it spicier, you can leave the seeds in.)

Heat cooking oil (vegetable oil recommended) in a frying pan and sauté minced garlic until fragrant. Then, add the sliced zucchini, carrot, and chopped chili peppers and stir-fry.

When the zucchini starts to look slightly translucent, add 1 Tbsp of anchovy sauce (fish sauce) to season, and add 3 Tbsp of water to stir-fry together. (You can also use regular soy sauce instead of fish sauce.)

Once the ingredients are well combined, turn off the heat and finish with a sprinkle of sesame seeds and a drizzle of sesame oil for a glossy, savory finish.

3. [Tangy and Sweet Cucumber Crab Stick Salad] Wash the cucumber thoroughly and julienne it thinly. Shred or julienne the imitation crab sticks to a similar length as the cucumber.

In a bowl, combine the prepared cucumber and crab sticks. Add minced garlic, vinegar, salt, sesame seeds, and sesame oil, then gently toss to mix. Your delicious cucumber crab stick salad is ready!

4. [Aromatic Eggplant Stir-fry with Sauce] Wash the eggplants and cut them into 3-4cm lengths. Lightly oil a frying pan and sauté the eggplant pieces until golden brown.

Once the eggplant is partially cooked, add 2 Tbsp of the prepared seasoning sauce (based on chili powder, soy sauce, minced garlic, green chili, sesame seeds, sesame oil) and 3 Tbsp of water. Stir-fry everything together.

Stir-fry until the sauce is evenly distributed. Turn off the heat and finish with a final touch of sesame seeds and sesame oil for a fragrant aroma.

5. [Fragrant Crown Daisy Salad] Wash the crown daisy thoroughly under running water and trim the roots. Briefly blanch it in boiling water with a pinch of salt for about 30 seconds. (Don’t overcook, or it will become mushy!)
