  • 100g Sea Purslane (Se-bal Namul)
  • 1/4 Onion
  • A small piece of Carrot
  • 1 Red Chili Pepper

Seasoning

  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Fish Sauce (Anchovy or similar)
  • 1.5 Tbsp Vinegar
  • 1 Tbsp Sugar
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

For Washing Sea Purslane

  • 1 Tbsp Vinegar

Cooking Instructions

Step 1

Begin by preparing the sea purslane. In a bowl large enough to submerge the purslane, add 1 tablespoon of vinegar to water and soak the sea purslane for 5 minutes. This helps to clean it thoroughly. After soaking, rinse it under cold running water several times to remove any remaining impurities. Finally, drain it well in a colander to remove excess moisture. This step is crucial for ensuring the salad stays crisp and not watery.

Thinly julienne the onion and carrot. For the red chili pepper, remove the seeds and finely chop it. Slicing the vegetables thinly ensures they blend well with the delicate sea purslane and maintain a pleasant texture.

In a mixing bowl, combine the drained sea purslane, julienned onion and carrot, and chopped red chili pepper. Add all the seasoning ingredients: 1/2 tablespoon minced garlic, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1.5 tablespoons vinegar, 1 tablespoon sugar, 2 tablespoons gochugaru, 1 tablespoon sesame oil, and 1 tablespoon toasted sesame seeds.

Gently mix all the ingredients together with your hands until everything is evenly coated with the dressing. Be careful not to overmix or mash the sea purslane; a light touch is best to preserve its crispness. If any parts of the sea purslane are clumped together, gently loosen them as you mix.
