Especially during this lovely season, try making a sweet and fragrant seasoned amaranth greens dish. Along with other nutritious greens like Bu-pung, amaranth makes for a simple yet incredibly nutritious meal. This quick and easy side dish is perfect for any meal!

Main Ingredients

  • 1 bunch fresh amaranth greens (approx. 2,000 KRW)
  • 1 Tbsp minced garlic

Basic Seasoning Sauce

  • 1 Tbsp fish sauce (for umami depth)
  • 3 Tbsp soy sauce for soup (for traditional flavor)
  • 1 pinch of sugar (for a subtle sweetness)
  • 1 Tbsp sesame seeds, crushed or whole (for nutty aroma)
  • 1 Tbsp shiitake mushroom powder (optional, enhances umami)

Finishing Touch

  • 1 Tbsp sesame oil (for rich aroma and flavor)

Cooking Instructions

Step 1

First, let’s prepare the basic seasoning sauce for your delicious seasoned amaranth greens. In a bowl, combine 1 tablespoon of fish sauce, 3 tablespoons of soy sauce for soup, a pinch of sugar, and 1 tablespoon of crushed sesame seeds. Mix them well. If you’d like an extra layer of savory flavor, you can add 1 tablespoon of shiitake mushroom powder – it’s optional but highly recommended for that extra umami boost! Don’t worry if you don’t have it; the dish will still be wonderfully flavorful. Preparing the sauce beforehand makes assembling the dish much quicker and easier.

Now, it’s time to prepare and blanch the amaranth greens. Gather one bunch of fresh amaranth greens (about 2,000 KRW worth). Carefully inspect the greens and remove any wilted leaves or tough stems. (I enlisted some help to clean mine, which charmingly doubled the cost!). Once cleaned, rinse the amaranth greens thoroughly under cold water several times. Bring a pot of water to a boil. Crucially, you only need to blanch the greens very briefly, just until they wilt slightly. Overcooking will make them mushy, so be mindful of the timing! Immediately after blanching, transfer the greens to a bowl of cold water to stop the cooking process and rinse them again under cool running water. This step is key to preserving their crisp texture and vibrant freshness.

After rinsing the blanched amaranth greens in cold water, gently squeeze out as much excess water as possible with your hands. Removing excess moisture is important to prevent the seasoning from becoming diluted and watery. Place the squeezed greens into a mixing bowl. Add all of the prepared seasoning sauce. Now, gently toss and mix the greens with your hands, like you’re gently massaging them. Be careful not to mash the greens; the goal is to evenly coat them with the delicious seasoning.

We’re in the final stretch! To enhance the overall aroma and flavor, drizzle in 1 tablespoon of sesame oil. Give the greens another gentle toss to distribute the sesame oil evenly. As soon as you catch that wonderful nutty aroma, your delicious seasoned amaranth greens are ready!
