Blanch for just 10 seconds, then immediately remove and rinse under cold running water. This quick blanching helps retain the spinach’s crisp texture and vibrant green color. To remove excess water, gently press the spinach between your palms rather than squeezing forcefully, which helps preserve its nutrients.
