Bomdong Geotjeori Ingredients
  • 1 bag fresh Bomdong (Spring Napa Cabbage)
  • 1/2 medium onion
  • 1 crisp Korean cucumber
  • 8 stalks of chives

Bomdong Geotjeori Seasoning
  • 2 Tbsp coarse gochugaru (Korean chili flakes)
  • 2 Tbsp brown rice vinegar (for a refreshing tang)
  • 2 Tbsp fish sauce (anchovy)
  • 1.5 Tbsp sesame oil
  • 2 Tbsp soy sauce
  • 1 tsp brown sugar (for a subtle sweetness)
  • 1 Tbsp plum extract (for sweet and sour notes)
  • 2 Tbsp roasted sesame seeds
  • Pinch of coarse sea salt (for seasoning)

Cooking Instructions

Step 1

Gently separate the leaves of the fresh Bomdong. To ensure cleanliness, soak the leaves in a light vinegar water solution for about 10 minutes. Afterwards, rinse them thoroughly under running water and shake off any excess moisture.

Step 2

Thinly slice the onion into strips. Soaking the sliced onions in cold water for about 10 minutes helps to mellow out their strong flavor, making them more palatable. Squeeze out the excess water before use.

Step 3

Trim any yellow or wilted parts from the chives. Wash them under running water and then cut them into roughly 2-3 cm (about 1 inch) lengths. This size allows the seasoning to penetrate beautifully.

Step 4

Wash the cucumber well. Rub it gently with coarse sea salt to remove any surface impurities and to make it crispier. Peel the cucumber lightly, then slice it diagonally into long, eyebrow-like shapes.

Step 5

Take the prepared Bomdong leaves and cut them lengthwise in half with a knife. Aim for a size that retains a good texture, avoiding cuts that are too small.

Step 6

Grasp the halved Bomdong leaves with both hands and break them into bite-sized pieces with a decisive snap, as if naturally tearing them. This method helps maintain the crisp texture and creates a more rustic appearance.

Step 7

Now, let’s make the delicious seasoning! Start by adding 2 tablespoons of coarse gochugaru (Korean chili flakes). This is a key ingredient that defines the flavor of the geotjeori!

Step 8

Add 2 tablespoons of soy sauce for a savory depth. It’s good to adjust the amount slightly to avoid making it too salty.

Step 9

For a clean and umami flavor, incorporate 2 tablespoons of fish sauce (anchovy). This will add a rich flavor without any fishy aftertaste.

Step 10

Add 1 teaspoon of brown sugar for a subtle sweetness. Adding too much can overpower the fresh taste of the geotjeori, so use it sparingly.

Step 11

Add 1.5 tablespoons of minced garlic to enhance the aroma and flavor. The pungent garlic scent pairs wonderfully with the Bomdong.

Step 12

Pour in 2 tablespoons of brown rice vinegar for a refreshing tang. This will add a zesty flavor that stimulates the appetite.

Step 13

Finally, drizzle in 1.5 tablespoons of sesame oil for a nutty fragrance. The aromatic sesame oil will elevate the overall flavor profile of the geotjeori.

Step 14

Add a small pinch of coarse sea salt to fine-tune the seasoning. Since the fish sauce and soy sauce already contribute saltiness, it’s best to add salt gradually after tasting.

Step 15

Mix all the prepared seasoning ingredients thoroughly with a spoon. Ensure the seasoning is smooth and well-combined, without any clumps.

Step 16

If the seasoning mixture feels too thick, gradually add a little lukewarm water until you achieve your desired consistency. Be careful not to make it too watery; adjusting it to the right thickness is key.

Step 17

Place all the prepared vegetables (Bomdong, onion, chives, cucumber) into a large mixing bowl. Gently toss them together to distribute them evenly.

Step 18

Gradually add the delicious seasoning mixture to the vegetables, a little at a time, while tossing gently to coat everything evenly. Be mindful not to overmix, which can bruise the vegetables.

Step 19

Continue to gently mix until the Bomdong is slightly wilted and the seasoning has thoroughly permeated the vegetables. Avoid vigorous mixing, as this can mash the vegetables.

Step 20

Arrange the beautifully mixed Bomdong Geotjeori onto a serving plate. It’s a perfect side dish to enjoy with a home-cooked meal, especially when your appetite is low. Enjoy your delicious spread!
