Easy and Healthy Vietnamese Spring Rolls Recipe Using Fridge Staples
Hello everyone! Today, I’ll show you how to easily make delicious and healthy Vietnamese spring rolls right at home! For a lighter, healthier option, I’ve skipped the meat and added flavorful crab sticks and sautéed mushrooms. This recipe is perfect for those on a diet or anyone seeking a fresh and satisfying meal.
Main Ingredients- Canned Pineapple (or pineapple chunks from fruit cocktail)
- 1 Fresh Cucumber
- 1/2 Carrot
- A good portion of your favorite mushrooms (e.g., oyster, king oyster)
- 3 Crab sticks
- 1/2 Onion
Cooking Instructions
Step 1
If you don’t have canned pineapple, you can use the pineapple pieces drained from a can of fruit cocktail to add a sweet touch. You can also use the pineapple directly from the can.

Peel and thinly slice half an onion. Soak the sliced onion in cold water for about 10 minutes to mellow out its strong flavor. This step ensures a pleasant crunch without an overpowering sharpness.

Wash the cucumber thoroughly. First, cut it in half lengthwise, then cut each half in half again, resulting in four long pieces. This makes it easier to julienne.

Lay the quartered cucumber pieces flat and slice them thinly into matchsticks. Aim for a consistent, thin cut.
