Main Ingredients- 2 handfuls fresh chives (about 200g)
Perfectly Balanced Seasoning- 1 Tbsp fish sauce (anchovy or sand lance)
- 1/2 Tbsp plum extract (adjust sweetness to taste)
- 1 tsp ginger syrup or minced ginger
- 1.5 Tbsp red pepper flakes (adjust spiciness to taste)
- 1/2 Tbsp sesame seeds
- 1 Tbsp vinegar (added at the end)
- 1 Tbsp fish sauce (anchovy or sand lance)

- 1 tsp ginger syrup or minced ginger
- 1.5 Tbsp red pepper flakes (adjust spiciness to taste)
- 1/2 Tbsp sesame seeds

Cooking Instructions
Step 1
First, prepare the fresh chives. Wash them thoroughly under cold running water, holding them upright, paying extra attention to the root ends to remove any dirt or debris. Rinse them 2-3 times, shake off excess water, and let them drain on a sieve for a moment.
Step 2
Make the seasoning mixture for your delicious chives salad in advance. In a small bowl, combine 1 Tbsp fish sauce, 1/2 Tbsp plum extract, 1 tsp ginger syrup, 1.5 Tbsp red pepper flakes, and 1/2 Tbsp sesame seeds. Mix well. If you don’t have ginger syrup, a tiny amount of minced fresh ginger can be used.
Step 3
Once the chives are reasonably dry, cut them into bite-sized pieces, about 5-6cm long. Place them in a large bowl. Cutting them to this length ensures they mix well with the seasoning and are easy to eat.
Step 4
Pour the pre-mixed seasoning over the chives. It’s important to toss them gently with your hands, mixing from the bottom up, rather than stirring vigorously. Over-mixing can make the chives lose their crispness and develop a raw ‘green’ flavor. Mix just enough to lightly coat the chives until they slightly wilt.
Step 5
Finally, drizzle 1 Tbsp of vinegar over the salad and toss gently one more time to finish. The vinegar will help preserve the chives’ freshness and add a refreshing tang. It’s best enjoyed immediately, but it’s also delicious served chilled after a brief rest in the refrigerator.
