Do you love abalone? I absolutely adore it! I’m a big fan of anything raw, and abalone’s unique chewy texture and delicate flavor are simply divine. Buying it can be expensive, but imagine getting incredibly fresh Wando abalone delivered right to your door and slicing it up for a taste of the sea… it’s pure bliss!

Abalone Sashimi

  • Fresh live abalone
  • Choganjang (spicy dipping sauce, typically made with gochujang, vinegar, sugar, garlic, and sesame oil)
  • Thinly sliced garlic
  • Cheongyang chili peppers (thinly sliced)

Cooking Instructions

Fresh live abalone should have a pleasant, subtle aroma of the sea. Choose abalone that feels firm to the touch and is actively moving – these are signs of freshness.

Let’s start preparing the abalone! It’s simpler than you might think. Use a toothbrush to gently scrub the surface of the abalone. This helps remove any marine growth or grime clinging to the shell.

After cleaning the abalone with the brush, use a spoon to separate the meat from the shell. Insert the spoon between the shell and the abalone meat and gently pry it upwards. It should come off quite easily, making this process beginner-friendly!

You’ll notice the green digestive gland, often called ‘geu’ or ‘innards,’ inside the abalone. While perfect for abalone porridge, if you’re enjoying it raw as sashimi, it’s best to remove it. Simply use your fingers to gently pull it away from the meat. It separates quite naturally.

Abalone also has a ‘beak’ or ‘mouth.’ You’ll find this hard, protruding part at the end of the abalone meat. You can easily remove it by making a cut with scissors or a knife to snip off the tip where the beak is located. Then, push the beak out with your fingers. A quick snip with scissors is the easiest method!

Slice the cleaned abalone meat into bite-sized pieces. Arrange the sliced abalone beautifully back into its cleaned shell. Look at this stunning presentation! It looks incredibly fresh and appetizing. This is a gourmet dish that would cost a fortune in a restaurant. Abalone is renowned as a top health food in Korea, often called one of the ‘three treasures of the sea.’ It’s a fantastic source of lean protein, vitamins, and minerals, making it excellent for boosting energy and vitality. This explains why abalone porridge is so popular in porridge shops!
