Aim for consistency, as finely shredded vegetables absorb the dressing better. Place the shredded carrots and radish in a bowl, sprinkle with 200g of coarse salt, and mix well. Let them sit for about 30 minutes to 1 hour, or until they soften and release some moisture. You can toss them halfway through to ensure even salting.

Once salted, squeeze out as much excess moisture from the carrots and radish as possible. This step is crucial to prevent a watery salad and to allow the dressing to adhere properly.
