Main Ingredients- 1/2 medium zucchini
- 1/2 small onion
- A small amount of carrot (about 1/5)
- 1 serving of somyeon noodles (about 100g)
Seasoning Ingredients- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
- 1/2 Tbsp minced garlic
- 1 Tbsp perilla oil
- Sesame seeds, to taste (about 1 tsp)

Cooking Instructions
Step 1
First, let’s cook the somyeon noodles. Bring a generous pot of water to a boil. Add the noodles and, once the water returns to a boil, pour in one cup of cold water. This step helps make the noodles extra chewy. Continue boiling for another 1-2 minutes, then rinse them thoroughly under cold running water and drain well. Chewy noodles are key to a great bibim guksu texture!
Step 2
Next, prepare the vegetables. Slice the zucchini thinly into half-moon shapes, avoiding the seedy core. Thinly slice the onion into strips and julienne the carrot. Try to make the vegetable slices consistent in thickness for even cooking and a better texture.
Step 3
Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced zucchini and carrot and stir-fry until the zucchini begins to soften. Then, add the sliced onion and stir-fry quickly over high heat until the onion becomes translucent and releases its sweet aroma. Cooking the vegetables well is crucial!
Step 4
You’ll notice a sweet zucchini aroma developing as the vegetables cook. Once they are tender, turn off the heat. Be careful not to overcook, as this can release too much water. Transfer the cooked noodles and stir-fried vegetables into a bowl. Now, we’ll add the seasoning ingredients and mix everything together.
Step 5
Let’s make the bibim sauce! In a small bowl, combine 1/2 Tbsp gochugaru, 1 Tbsp soy sauce, and 1/2 Tbsp minced garlic. Pour this sauce over the noodles and vegetables in the bowl. Gently mix everything together, ensuring the noodles and vegetables are evenly coated and don’t clump. Finally, drizzle 1 Tbsp of fragrant perilla oil over the top and sprinkle generously with sesame seeds. Your delicious Zucchini Bibim Guksu is ready! For an extra touch of flavor, you can add a little sugar or vinegar to your liking.
