Essential Ingredients

  • 2 large fresh eggs
  • 100g granulated sugar (about 1/2 cup)
  • 120g cake flour, sifted (about 1 cup)
  • 5g baking powder (about 1 teaspoon)
  • 120g unsalted butter, melted (about 1/2 cup + 1 Tbsp)
  • 7g yuzu powder (about 1.5 teaspoons)
  • A little grapeseed oil, for greasing

Cooking Instructions

Step 1

In a mixing bowl, gently whisk the 2 large eggs until lightly beaten. Add the 100g of granulated sugar and stir until the sugar is mostly dissolved and the mixture looks slightly pale. Avoid over-whipping; a gentle mix is all you need.

Sift the 120g of cake flour, 5g of baking powder, and 7g of yuzu powder into a separate bowl. Sifting ensures a smoother texture and prevents lumps. Add these sifted dry ingredients to the egg and sugar mixture. Fold them in gently with a spatula or whisk until just combined. Be careful not to overmix.

Melt the 120g of unsalted butter until it’s warm but not hot to the touch. Pour the melted butter into the batter. Using a spatula or whisk, gently incorporate the butter until the batter is smooth and homogenous. Mix only until combined to prevent developing too much gluten, which can make the madeleines tough.

Lightly brush the inside of your madeleine molds with a little grapeseed oil to prevent sticking. Fill each mold with the batter, about 80% full, to allow room for them to puff up. Bake in a preheated oven at 180°C (350°F) for 10 to 13 minutes, or until the madeleines are golden brown and slightly puffed. Enjoy your delicious homemade Yuzu Madeleines!
