Main Ingredients
  • Water parsley 280g
  • Radish 200g
  • Red chili pepper 1pc

Seasoning Ingredients
  • Soy sauce 1 Tbsp
  • Soup soy sauce 2 Tbsp
  • Minced garlic 1 Tbsp
  • Red chili flakes 2.5 Tbsp
  • Plum extract 3 Tbsp
  • Vinegar 2 Tbsp
  • Sesame seeds (crushed) 1 Tbsp
  • Sesame oil a little

Cooking Instructions

Step 1

It’s best to purchase water parsley when it’s in season for the best flavor. It’s tender, fragrant, and importantly, you can eat it with peace of mind as it’s clean and free from leeches. Fresh water parsley has very few unusable parts, making it an economical ingredient.

Step 2

Trim off the tough or dirty ends of the water parsley. This makes it more pleasant to eat and cleaner.

Step 3

Fill a bowl with enough water to submerge the water parsley and add 2-3 tablespoons of vinegar. Let it soak for about 10 minutes. This is the most effective way to remove any leeches or impurities that might be present.

Step 4

After soaking in the vinegar water, gently shake and rinse the water parsley, ensuring you clean between the stems. Rinse the leaves similarly, ensuring no debris remains.

Step 5

Cut the cleaned water parsley into segments about 4-5 cm long. Julienne the radish thinly. For the red chili pepper, remove the seeds and slice it thinly on an angle or mince it. If you prefer more heat, you can use a Cheongyang chili pepper, or add chopped green onions for extra fragrance.

Step 6

In a bowl, combine all the seasoning ingredients (soy sauce, soup soy sauce, minced garlic, red chili flakes, plum extract, vinegar, sesame seeds) and mix well to create a delicious dressing.

Step 7

Take half of the prepared dressing and add it to the julienned radish. Gently mix and massage the radish with your hands until lightly coated. Marinating the radish first allows the flavors to penetrate better.

Step 8

Add the prepared water parsley and red chili pepper to the marinated radish. Add the remaining dressing and gently toss everything together. Be careful not to overmix, to preserve the fresh, crisp texture of the water parsley. Taste and adjust the vinegar or sweetness according to your preference.

Step 9

Finish with a drizzle of sesame oil for added fragrance. This seasoned water parsley is also incredibly delicious mixed with rice! Enjoy your delicious meal today!
