A summer delicacy! Make this ‘Tomato Basil Syrup’ that’s delightfully sweet with a subtle, aromatic basil scent. When enjoyed as a refreshing ade with sparkling water, it magically melts away the summer heat! It’s a perfectly cooling summer drink that revitalizes you from head to toe.
Main Ingredients- 500g fresh cherry tomatoes
- 400g granulated sugar or brown sugar
- 10g fresh basil leaves
- 1/2 lemon
- 1.5 paper cups (approx. 270ml) sparkling water
- 1 paper cup (approx. 180ml) ice cubes
Cooking Instructions
Step 1
First, wash the cherry tomatoes thoroughly and remove the stems. Make shallow cross-shaped incisions (+) on the bottom of each tomato. This step will make it easier to peel them later.
Step 2
Bring a pot of water to a rolling boil. Gently blanch the incised cherry tomatoes in the boiling water for about 5-10 seconds. Be careful not to over-blanch, as they can become mushy. Immediately remove them from the hot water and transfer them into a bowl of ice-cold water to cool down. The sudden temperature change helps the skins peel off more easily.
Step 3
Once cooled, the skins of the cherry tomatoes should peel off effortlessly with a gentle touch. After peeling all the tomatoes, use a paper towel to pat them dry and remove as much moisture as possible. Excess water can shorten the shelf life of the syrup.
Step 4
Juice the half lemon you prepared. In a bowl with the dried cherry tomatoes, add the lemon juice and all 400g of sugar. Gently mix them together, ensuring the sugar is evenly distributed and begins to coat the tomatoes.
Step 5
Add the clean, dried fresh basil leaves to the mixture and stir lightly. Cover the container tightly with a lid or plastic wrap. Let it sit at room temperature in a well-ventilated area for one full day to allow the flavors to meld and the sugar to dissolve.
Step 6
Now, it’s time to make a delicious Tomato Basil Ade! Fill a chilled glass with 1 paper cup of ice cubes. Pour in 1.5 paper cups of sparkling water.
