Main Ingredients- 1 bag of fresh chwinamul (approx. 200-300g)
- 2 Tbsp green onion (finely chopped)
Seasoning Ingredients- 1 Tbsp perilla oil
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Trim the thick, tough stems from the fresh chwinamul, either by cutting with a knife or snapping them off by hand. Rinse the greens thoroughly under running water to remove any dirt or debris.
Step 2
Bring a pot of water to a rolling boil. Add 1 tablespoon of salt to the boiling water, then gently add the chwinamul. Blanch for about 1 minute. Be careful not to overcook, as this can make the greens mushy.
Step 3
Immediately remove the blanched chwinamul from the hot water and plunge it into a bowl of cold water to cool. Drain well in a colander, then squeeze out as much excess water as possible. Squeezing firmly will help prevent the greens from clumping together during cooking.
Step 4
Cut the squeezed chwinamul into bite-sized pieces. In a mixing bowl, combine the chwinamul with 1/2 Tbsp soy sauce (adjust to your taste), 1 Tbsp minced garlic, and 2 Tbsp chopped green onion. Gently toss and massage the ingredients together with your hands until the seasoning is well distributed and absorbed.
Step 5
Heat 1 Tbsp of perilla oil in a preheated pan over medium heat. Add the seasoned chwinamul to the pan. Using chopsticks, gently stir-fry the greens for about 2-3 minutes, ensuring they don’t burn. Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds. Toss lightly to combine and finish.
