Ingredients for Fragrant Wild Chive Salad
- 1 bunch fresh wild chives (dollae, approx. 100g)
- 0.5 Tbsp gochugaru (Korean chili flakes), adjust to taste
- 1 Tbsp soy sauce (Guk-ganjang or Yangjo-ganjang)
- 1 Tbsp rice vinegar
- 1 Tbsp perilla oil (deulgireum)
- 1 Tbsp lemon syrup (or sugar/honey)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Wild chives are often sold bundled with rubber bands. Before removing the band, gently scrape off any dirt or loose outer skins from the root end of the chives with the back of a knife. Thoroughly cleaning the roots ensures a cleaner taste.
Step 2
After preparing the chives, rinse them thoroughly under running water several times to remove any remaining dirt or grit. Gently shake off excess water and cut the chives into bite-sized pieces, about 3-4 cm long. Cutting them too long can make them difficult to eat.
Step 3
Place the prepared wild chives in a large bowl. Add all the seasoning ingredients: gochugaru, soy sauce, vinegar, perilla oil, and lemon syrup. Sprinkle with toasted sesame seeds. Gently toss everything together with your hands until the dressing is evenly distributed. Be careful not to overmix, as this can make the chives mushy.
