  • 1/2 head of spring cabbage
  • 2 shiitake mushrooms
  • 1/2 block of firm tofu
  • 1 handful of bean sprouts
  • 1 king oyster mushroom
  • 5 dumplings
  • 5 shrimp

Cooking Instructions

Prepare the shiitake mushrooms by trimming the stem slightly and making a few shallow cuts on the cap. If you don’t have shiitake mushrooms, you can use the cap part of king oyster mushrooms. Thinly slice the king oyster mushroom caps.

Cut the tofu into bite-sized pieces (about 2cm thick squares). Place the prepared tofu in a dry pan and cook over low heat until each side is golden brown.

The key is to thoroughly sear all sides of the tofu until crispy. This prevents the shabu-shabu broth from becoming cloudy and enhances the nutty flavor and texture of the tofu itself.

Feel free to use any vegetables you have on hand, in addition to the spring cabbage. For instance, adding napa cabbage, bok choy, or other mushrooms (enoki, oyster mushrooms, etc.) will make your shabu-shabu even richer. Wash and chop the vegetables into bite-sized pieces.

Adjust the quantities of tofu, dumplings, and shrimp according to your preference, or add other seafood (like squid or clams) or your favorite ingredients. Including a variety of ingredients will make the dish more substantial and delicious.

It’s time to make the broth. Bring 1 liter of water to a boil and add 2-3 coin soup stocks. If you don’t have coin soup stocks, using store-bought anchovy-kelp broth is also a good option. Once the broth boils, season it with 1 tablespoon of soy sauce for soup and 1 tablespoon of fish sauce. Taste and adjust the seasoning with salt or more soy sauce to your liking. This will result in a clear and refreshing broth.
