  • 3 bunches of seaweed (Parae)
  • A small amount of radish

Seasoning Ingredients

  • 1 Tbsp coarse salt
  • 1/2 Tbsp anchovy sauce (fish sauce)
  • 1 tsp fine red chili powder
  • 1.5 Tbsp salted shrimp liquid
  • 1/2 Tbsp sesame seeds
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp plum syrup (or agave nectar)
  • 1 Tbsp ginger syrup (or finely minced ginger)
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

First, it’s important to clean the seaweed thoroughly. Add 1 tablespoon of coarse salt to the seaweed and gently knead it with your hands as if washing it. This helps remove any bitterness and impurities. Then, rinse it under running water several times to remove excess salt.

Place the cleaned seaweed in a sieve to drain any excess water completely. It’s important to remove as much moisture as possible, as leftover water can make the salad taste diluted.

Shred the radish thinly. In a separate bowl, combine the shredded radish with 1/2 tablespoon of anchovy sauce and 1 teaspoon of fine red chili powder. Gently toss to coat and let it marinate for a few minutes. The chili powder is mainly for color; you can omit it if you prefer.

Add the drained seaweed to the marinated radish. Now, incorporate 1/2 tablespoon of sesame seeds, 1/2 tablespoon of plum syrup, 1 tablespoon of ginger syrup, and 1.5 tablespoons of salted shrimp liquid. Mix everything well. Finally, add 1 tablespoon of vinegar and toss gently one more time to combine all the flavors. Your delicious Parae Muchim is ready!
