Easy and Delicious Chwinamul Salad Recipe

Chwinamul, a flavorful spring vegetable, boasts a unique aroma and a slightly pungent taste. It’s rich in fiber, aiding digestion and helping to lower cholesterol levels. Today, I’ll share a super simple Chwinamul salad recipe that anyone can follow easily. 🙂
Main Ingredients- 150g fresh Chwinamul (Aster scaber)
- 1 tsp coarse salt (for blanching)
- Cold water
- 1 Tbsp vinegar (for soaking)
Cooking Instructions
Step 1
First, thoroughly wash the Chwinamul under running water to remove any dirt or debris. Then, pour about 1 cup of cold water into a bowl, add 1 tablespoon of vinegar, mix well, and soak the prepared Chwinamul for 5 minutes. This step helps to effectively remove any bitterness or impurities. After 5 minutes, drain the Chwinamul and let it sit in a colander to remove excess water.

Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Once the water is boiling vigorously, add 1 teaspoon of coarse salt and then add the prepared Chwinamul. Gently turn the Chwinamul over as it cooks for exactly 1 minute. Be careful not to over-blanch, as it can make the texture mushy.

Step 3
Immediately transfer the blanched Chwinamul to cold water and rinse it several times to cool it down. After rinsing, gently gather the Chwinamul with your hands and squeeze out the excess water. Avoid squeezing too hard, but ensure most of the water is removed. This prevents the salad from becoming watery and helps the dressing adhere better.

Step 4
Once the water is squeezed out, roughly chop the Chwinamul into bite-sized pieces. Cutting them too small can diminish the pleasant texture of the herb, so aim for a moderate size.

Step 5
Place the chopped Chwinamul into a bowl and add all the prepared seasoning ingredients. Add 1 tablespoon of soy sauce, 1 teaspoon of minced garlic, 1 tablespoon of sesame oil, a pinch of sesame seeds, and 2 pinches of salt. (Adjust the amount of salt according to your preference.) Now, gently mix everything together with your hands, ensuring all the seasonings are evenly distributed throughout the Chwinamul. Your fragrant Chwinamul salad is ready!
