Sea purslane, also known as ‘gyetnamul’ in some regions, is a succulent plant that grows by the coast, absorbing minerals from saltwater, giving it a unique briny flavor and a crisp texture. This recipe will guide you through making a refreshing and flavorful sea purslane salad with a simple yet delicious seasoning.

  • 150g Sea Purslane

Seasoning Ingredients

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 0.5 Tbsp Soy Sauce
  • 1 Tbsp Fish Sauce (Myeolchi Aekjeot)
  • 1 Tbsp Vinegar
  • 1 Tbsp Oligosaccharide (or corn syrup/honey)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil (optional)

Cooking Instructions

Step 1

First, rinse the sea purslane thoroughly under cold running water several times to remove any dirt or debris. Bring a pot of water to a boil and add 0.5 Tbsp of salt. Quickly blanch the sea purslane for just 30 seconds. Be careful not to overcook, as it can become mushy.

Immediately after blanching, rinse the sea purslane under cold water to stop the cooking process and cool it down. Drain it well in a colander and then gently squeeze out any excess water with your hands. Excess moisture can dilute the flavor of the seasoning.

In a mixing bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 0.5 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp vinegar, 1 Tbsp oligosaccharide, and 1 Tbsp minced garlic. If desired, add 1 Tbsp of sesame oil for extra richness. Add the prepared sea purslane to the bowl and gently toss everything together to coat the leaves evenly, being careful not to crush them.

Once all the seasoning is well incorporated and the sea purslane is evenly coated, your delicious sea purslane salad is ready to be served! Enjoy its vibrant color and fresh taste.
