Ingredients

  • 1.5 stalks of scallions (both white and green parts)
  • 2 fresh eggs
  • 1.5 bowls of cooked rice (warm or cooled)
  • Pinch of salt (to taste)
  • 1/2 Tbsp soy sauce (for umami)
  • 1 Tbsp perilla oil (for nutty aroma)

To bring out the maximum fragrant flavor, finely chop the scallions, including both the white and green parts. A generous amount of scallions is key to the dish’s delicious aroma. Aim for a fine chop, about 0.5 cm thick.

In a bowl, crack the 2 fresh eggs and add a pinch of salt. Add the 1.5 bowls of cooked rice. Gently mix everything together with chopsticks or a spatula until the rice grains are evenly coated with the egg mixture. Be careful not to mash the rice; aim for a loose, fluffy consistency.

This step is crucial for developing the delicious base flavor! Heat a pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, add all the chopped scallions. Stir-fry the scallions until they become fragrant and slightly softened, releasing their aromatic oils. This is your ‘scallion oil’ base. Keep the heat at medium-low to prevent burning.

Once the scallions are fragrant, add the egg-coated rice to the pan. Stir-fry the rice, breaking up any clumps, until it becomes fluffy and each grain is separated. Push the rice to one side of the pan. Pour the 1/2 Tbsp of soy sauce into the empty space and let it sizzle and caramelize slightly. Then, mix it in with the rice. This creates a wonderful ‘wok hei’ or smoky flavor.

Finally, drizzle the 1 Tbsp of perilla oil around the edges of the pan. Give everything a final toss to combine the flavors.
