Fragrant Perilla Oil Stir-fried Sweet Potato Stems

This side dish is made using sweet potato stems I had stored in the freezer from their peak season, seasoned with aromatic perilla oil and savory seasonings. I’ll show you how to easily and deliciously make this special side dish.

Main Ingredients

  • 200g Boiled Sweet Potato Stems (If using fresh, peel and boil them first)
  • 1/2 Onion (sliced thinly)
  • 1/2 Green Onion (chopped finely)

Seasoning Ingredients

  • 1 Tbsp Perilla Oil
  • 0.5 Tbsp Minced Garlic
  • 1 Tbsp Soy Sauce for Soup (or regular soy sauce)
  • 0.5 Tbsp Red Pepper Flakes (adjust to taste)
  • 0.5 Tbsp Sesame Oil
  • A pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the sweet potato stems. If you’re using pre-boiled stems, you can use them directly. If you’re using fresh ones, start by peeling them thoroughly. Boil them in water with a pinch of salt until the stems are soft enough to be mashed easily with your fingers (usually about 3-5 minutes). After boiling, rinse them under cold water and squeeze out any excess moisture.

Thinly slice the onion and finely chop the green onion, preparing them to add their flavor and aroma.

Heat a pan over medium heat and add 1 tablespoon of fragrant perilla oil. Add 0.5 tablespoon of minced garlic. Sauté slowly until the garlic becomes fragrant. Be careful not to burn the garlic.

Once the oil and garlic are fragrant, add the squeezed sweet potato stems to the pan. Stir-fry for about 1-2 minutes until the stems are evenly coated with the oil and seasonings.

Add the thinly sliced onions over the sweet potato stems and stir-fry together. Continue cooking until the onions become slightly translucent.

Now it’s time to add the seasonings for that savory depth. Add 0.5 tablespoon of red pepper flakes and 1 tablespoon of soy sauce for soup. Stir-fry on medium heat until everything is well combined. If you prefer a dish with a bit more sauce, you can add about 1/2 cup of water at this stage and let it simmer.

Once all the seasonings are well incorporated and the ingredients are nicely stir-fried, add the chopped green onions. Stir-fry briefly until the green onions are just wilted, adding a fresh aroma.

Turn off the heat. Finish by drizzling 0.5 tablespoon of sesame oil and sprinkling a pinch of sesame seeds on top for extra nuttiness and flavor. Your fragrant and delicious perilla oil stir-fried sweet potato stems are now ready!
