We made a simple yet delicious perilla leaf sprout namul using the sprouts featured on ‘Man Nam Restaurant’. This namul truly shines when used as a filling for gimbap! Sautéed carrot strips from the freezer, crunchy pickled radish, and plenty of fresh leafy vegetables create a perilla leaf sprout gimbap that is light, satisfying, and incredibly addictive. While traditional gimbap often includes ham, imitation crab, or fish cakes, this recipe is delicious without them. The perilla leaf sprout namul itself is also a fantastic side dish or a great addition to bibimbap, offering excellent versatility. Perilla Leaf Sprout Namul Ingredients

  • 170g fresh perilla leaf sprouts
  • 2 Tbsp savory perilla seed powder (deulkkae garu)
  • 2 Tbsp fragrant perilla seed oil (deulgireum)
  • 2 Tbsp Korean soy sauce (jin ganjang)
  • 1 tsp minced garlic

Perilla Leaf Sprout Gimbap Ingredients

  • 50g pre-seasoned perilla leaf sprout namul
  • 1 fresh carrot
  • Pinch of salt (for sautéing carrots)
  • 6 strips pickled radish (danmuji)
  • 6 strips stir-fried fish cake (optional, as a side dish)
  • 12 fresh leafy greens (for wrapping)
  • 3 bowls cooked rice
  • 1 tsp salt (for seasoning rice)
  • 1 tsp toasted sesame seeds
  • 1 tsp sesame oil

Cooking Instructions

Step 1

First, wash the carrot thoroughly and julienne it into thin strips. Lightly oil a pan and sauté the carrot strips. Season with a pinch of salt during cooking. Sauté until the carrots are slightly tender.

Prepare the fresh perilla leaf sprouts. Wash them multiple times under running water to remove any dirt or debris. Drain the washed sprouts well in a colander.

Blanch the thoroughly washed perilla leaf sprouts in boiling water for a very short time, just until they wilt, about 20-30 seconds. Immediately remove them from the boiling water. Overcooking can make them mushy.

Rinse the blanched perilla leaf sprouts under cold water to stop the cooking process. Gently squeeze out as much water as possible using both hands. Excess water can dilute the flavor of the namul.

Add all the seasoning ingredients to the drained perilla leaf sprouts and gently mix them together by hand. The nutty fragrance of perilla seed oil, the savory depth of perilla seed powder, the mild pungency of minced garlic, and the umami of soy sauce combine to create a delicious namul.

Gently cover the fillings with more leafy greens, then tightly roll the gimbap using the bamboo mat. Ensure the fillings don’t spill out by rolling firmly from the beginning. Your healthy and delicious perilla leaf sprout gimbap is now complete.
