When you’ve lost your appetite, try this quickly made perilla leaf kimchi. Place it over your rice, and one bowl will be no problem at all! This recipe is perfect for a quick, flavorful side dish.
Main Ingredients- 15 fresh perilla leaves
- 1/4 medium onion
- Small amount of green onion (white part preferred)
Flavorful Seasoning- 6 Tbsp soy sauce
- 3 Tbsp red chili flakes (gochugaru)
- 1 Tbsp oligosaccharide (or corn syrup)

Step 1
First, prepare about 15 fresh perilla leaves. Choose leaves that are medium-sized and appear fresh. Gently wash them under running water. After washing, carefully pat them dry with paper towels. Ensuring the leaves are dry is crucial to prevent the kimchi from becoming watery and mushy.

Now, let’s make the delicious seasoning for your perilla leaf kimchi. In a bowl, combine 6 tablespoons of soy sauce, 3 tablespoons of red chili flakes (gochugaru), 1 tablespoon of oligosaccharide for sweetness, 1 tablespoon of freshly minced garlic for a pungent kick, and 1 tablespoon of toasted sesame seeds for nutty flavor. Finally, add 2 tablespoons of water to help achieve a good consistency for the seasoning.

Next, we’ll prepare some vegetables to enhance the flavor and texture of the seasoning. Peel and thinly slice 1/4 of an onion into fine shreds. Also, finely chop or thinly slice a small amount of green onion, focusing on the white parts for a milder flavor. These vegetables will add more depth and a pleasant crunch to the kimchi.

Once assembled, your flavorful perilla leaf kimchi is ready! While it’s delicious right away, letting it rest in the refrigerator for a while will allow the flavors to meld beautifully, creating an even richer taste.
